- 1/2 Cup butter, softened
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup sugar
- 1 cup chopped pecans
- 1 1/2 cup flour
- 2 beaten eggs
- 3 ripe bananas, crushed
Preheat oven degrees. Grease loaf pan. Cream butter with sugar until fluffy. Add eggs and mix thoroughly. Add baking soda, baking powder, and flour. Mix well. Add bananas and pecans. Pour into prepared pan. Bake until center is done. Time for baking will very depending on oven; plan on a minimum of 35 minutes. Test for doneness by inserting a skewer or toothpick into loaf center. Bread is done when skewer or tooth pick comes out clean. Allow to cool 10 minutes; then remove loaf from pan and cool on rack.
*I cook this in two loaf dishes for 45 minutes
